- 2 MEDIUM SIZED SLICED EGGPLANT.
- 2 T/S CURRY POWDER
- SALT TO TASTE
- OIL FOR SHALLOW FRYING.
METHOD
- TAKE A BOWL. ADD SLICED EGGPLANT.
- NOW ADD INSTANT CURRY POWDER (EASY TO MAKING CURRY POWDER DRIED CURRY LEAVES,CARDAMOM,CINNAMON,CLOVES,TURMERIC,DRIED RED CHILI,STAR-ANISE,CORIANDER SEEDS,SOME OF KASURI METHI (OPTIONAL) PUT ALL THE IN TO THE BLENDER AND BLEND TILL THE ALL INGREDIENTS FINELY POWDERED.)
- NOW MIX IT WELL.
- HEAT TAWA. ADD 2 T/S OF OIL.
- NOW SHALLOW FRY ALL EGGPLANT SLICED.
- ON MEDIUM FLAME SHALLOW FRY THE EGGPLANT (NOTE:-DO NOT HIGH FLAME DURING THE SHALLOW FRY.)
- WHEN THE ONE SIDED IS LOOKING LIGHT GOLDEN BROWN COLOR. TURN IT OVER ANOTHER SIDE AND AGAIN SHALLOW FRY IT FOR 2 MINUTES ON MEDIUM TO LOW FLAME.
- NOW YOUR BAIGAN BHAJA IS READY TO SERVE WITH HOT RICE & DAL.

1. TAKE A BOWL. ADD SLICED EGGPLANT.
2.ADD INSTANT CURRY POWDER(FOR MAKING A CURRY POWDER. TAKE A BLENDER ADD 20 DRIED CURRY LEAVES,1 T/S CARDAMOM ,1/2 T/S CLOVE ,1 INCH STICK OF CINNAMON, 1 1/2 ROASTED CORIANDER SEEDS, 10 RED DRIED CHILI, 1 STAR-ANISE ROAST THE INGREDIENTS THEN 2 T/S OF TURMERIC POWDER,SOME OF KASURI METHI AND BLEND IT. YOUR CURRY POWDER IS READY YOU CAN USE TO MAKE IT ANY KIND VEG OR NON-VEG CURRY.)
3.MIX IT WELL.
4. HEAT A TAWA AND 2 T/S OF OIL.
5. SHALLOW FRY ALL THE EGGPLANTS.
6.WHEN THE ONE SIDE OF EGGPLANT BECOME GOLDEN BROWN COLOR.
7. TURN IT THE ANOTHER SIDE OF EGGPLANT. AND AGAIN COOK IT FOR 2-3 MINUTES ON LOW TO MEDIUM FLAME.
